  • 8 oz fresh chorizo
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 28 oz can fire-roasted tomatoes
  • 15 oz can kidney beans, drained
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Sear the short ribs in a large pot over medium-high heat until browned on all sides (about 3-4 minutes per side). Remove and set aside.
  2. In the same pot, cook the chopped chorizo until crispy (about 5 minutes), scraping up any browned bits.
  3. Add diced onions and minced garlic; sauté until softened (5-7 minutes).
  4. Return seared short ribs to the pot; add canned tomatoes, beef broth, drained beans, and spices. Stir well.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for at least 2 hours until ribs are tender.
