  • 4 large eggs
  • 1 ripe avocado, sliced
  • 1 (4 oz) can diced green chiles
  • 1 cup canned black beans, rinsed
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a medium skillet over medium heat, crumble and cook the chorizo until browned (about 8 minutes), stirring occasionally.
  2. In a bowl, whisk the eggs with salt and pepper. Pour into another heated skillet over medium-low heat and gently stir until fluffy (3–4 minutes).
  3. Drain and rinse the black beans; add them to the skillet with chorizo during the last minute of cooking to warm through.
  4. In serving bowls, layer cooked chorizo and black beans first, followed by scrambled eggs.
  5. Top each bowl with avocado slices, cherry tomatoes, green chiles, and cilantro.
