  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, chopped
  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 4 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 tsp fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat, add olive oil and brown the beef on all sides. Remove and set aside.
  2. Sauté onions and garlic in the same pot for about 5 minutes until softened.
  3. Stir in carrots and celery; cook for an additional 3 minutes.
  4. Return the beef to the pot; sprinkle in flour (optional) to thicken.
  5. Pour in beef broth and red wine; add thyme and bay leaf. Bring to a boil then reduce to low heat.
  6. Cover and simmer for about 2 hours until the beef is fork-tender.
  7. Meanwhile, boil potatoes until tender; drain and mash with butter and cream.
  8. Serve stew topped with creamy mashed potatoes.
