  • 2 cups elbow macaroni
  • 2 tsp olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 cups canned diced tomatoes (with juices)
  • 2 cups low-sodium chicken broth
  • 2 tsp chili powder (adjust to taste)
  • 4 oz cream cheese, softened
  • ½ cup sour cream

  1. Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until golden brown and cooked through, about 7-10 minutes. Remove from skillet.
