  • 2 medium carrots, diced
  • 2 stalks celery, chopped

  • 8 ounces mushrooms (cremini or button), diced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the wild rice under cold water. In a saucepan, combine wild rice and vegetable broth. Bring to a boil, then reduce heat and simmer for about 45 minutes until tender.
  2. In a large pot over medium heat, add olive oil. Sauté onion for 3 minutes until translucent, then add carrots and celery. Cook for an additional 5 minutes until softened.
  3. Stir in garlic and mushrooms; cook for another 5 minutes until mushrooms brown.
  4. Add cooked wild rice to the pot along with remaining vegetable broth, thyme, salt, and pepper. Simmer for another 20 minutes.
  5. Taste and adjust seasoning as desired before serving hot.
