  • 1 cup butternut squash (roasted and mashed)
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup unsalted butter (cold, cubed)
  • 1/2 cup milk or cream

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roast the butternut squash halves cut-side down for 30–40 minutes until tender; allow to cool and scoop out the flesh.
  3. In a bowl, whisk together flour, baking powder, brown sugar, cinnamon, and nutmeg.
  4. In another bowl, mix the roasted squash with milk or cream and melted butter until smooth.
  5. Combine wet and dry ingredients gently until just incorporated.
  6. Turn dough onto a floured surface; pat into a circle about one inch thick and cut into wedges or desired shapes.
  7. Place on prepared baking sheet and bake for 20–25 minutes until lightly browned.
