  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 2 cups fresh Granny Smith apples, chopped
  • 2 medium carrots, diced
  • 1 medium yellow onion, finely chopped
  • 2 cups pure apple cider
  • 2 tbsp olive oil
  • 2 large russet potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • ½ cup whole milk

Instructions

  1. Prepare your ingredients by washing and chopping the apples and vegetables. Season the chicken with salt and pepper.
  2. Heat olive oil in a large pot over medium heat. Add onions and carrots; sauté for about 5 minutes until softened.
  3. Add the chicken to the pot and cook until browned on all sides, approximately 8 minutes.
  4. Stir in chopped apples and apple cider; bring to a gentle simmer for about 10 minutes.
  5. If desired, thicken the stew by mixing cornstarch with water and adding it to the pot; simmer for an additional 5 minutes.
  6. Meanwhile, boil peeled potato chunks in salted water until fork-tender (15-20 minutes). Drain and mash with butter and milk until creamy.
  7. Serve the stew generously over mashed potatoes.
