  • 2 cups low-sodium vegetable broth

  • 2 stalks celery, diced
  • 8 oz cremini or button mushrooms, diced
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh sage, chopped
  • 0.5 cup dried cranberries
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Rinse wild rice under cold water; combine with vegetable broth in a medium saucepan. Bring to a boil, reduce heat, cover, and simmer for 45-50 minutes until tender.
  2. In a large skillet, heat olive oil over medium heat. Sauté onions and celery for about 5 minutes until softened. Add mushrooms and cook until moisture is released (about 5 minutes).
  3. Stir in thyme, sage, and cranberries; mix well.
  4. Combine cooked wild rice with the vegetable mixture; season with salt and pepper.
  5. Preheat oven to 350°F (175°C). Transfer stuffing to a greased baking dish; cover with foil and bake for 20-25 minutes.
