  • 2 ripe avocados
  • 1 cup fresh basil leaves
  • 2 garlic cloves
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil salted water in a large pot. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Prepare the Sauce: In a blender, combine avocados, basil, garlic, lemon juice, and olive oil. Blend until smooth; add reserved pasta water gradually for desired consistency.
  3. Combine Pasta and Sauce: Return drained pasta to the pot over low heat. Pour in the avocado sauce and stir until evenly coated.
