This Creamy Garlic & Parsnip Puree is a luxurious side dish that marries the sweetness of parsnips with the rich, mellow flavors of roasted garlic.   • 1 lb parsnips, peeled and chopped
  • 4 whole garlic cloves
  • 1/2 cup heavy cream
  • 1 cup low-sodium vegetable broth
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap garlic cloves in foil with a drizzle of olive oil and roast for about 30 minutes until soft.
  2. In a pot, combine chopped parsnips and vegetable broth. Bring to a boil over medium heat, then simmer for 15-20 minutes until tender.
  3. Squeeze the roasted garlic into the pot with the parsnips. Add heavy cream and butter. Use an immersion blender to puree until smooth.
  4. Adjust the consistency with more broth or cream if needed. Season with salt and pepper before serving warm.
