  • 8 oz medium shells or rotini pasta
  • 1 lb lean ground beef or turkey
  • 1 packet (1 oz) taco seasoning
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 cup shredded cheddar or Mexican blend cheese

Instructions

  1. In a large pot over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat.
  2. Add the diced onion and minced garlic to the pot and sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the pasta and taco seasoning, then pour in the chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for 10-12 minutes until pasta is al dente.
  4. Stir in the heavy cream until well combined and simmer gently for another minute.
