  • 4 sage leaves, fresh

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  3. Roast for 20-25 minutes until golden brown, stirring halfway through.
  4. Meanwhile, boil salted water in a pot and cook orzo according to package instructions until al dente. Drain and set aside.
  5. In a large skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add spinach and cook until wilted.
  6. Combine roasted squash, cooked orzo, heavy cream, and Parmesan in the skillet. Stir well to combine and heat through.
