  • 2 medium sweet potatoes (about 400g), peeled and cubed
  • 1 cup red lentils (200g), rinsed
  • 1 small onion (100g), finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley or cilantro (15g), chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 large eggs
  • 1 cup panko breadcrumbs (100g)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, bring 1 cup of rinsed red lentils and 3 cups of water to a boil. Reduce heat, simmer for about 15 minutes until tender, then drain.
  3. Boil cubed sweet potatoes in salted water until fork-tender (10-15 minutes). Drain and mash until smooth.
  4. In a bowl, mix the mashed sweet potatoes, cooked lentils, onion, garlic, herbs, spices, and beaten eggs until well combined.
  5. Shape the mixture into small patties and coat each in panko breadcrumbs.
  6. Bake for 25-30 minutes or pan-fry in olive oil for about 4-5 minutes per side until golden brown.
