  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 cup heavy cream
  • 2 cups powdered sugar
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
  2. In a bowl, beat eggs and granulated sugar until fluffy. Gradually mix in melted butter. Fold in sifted flour and cocoa powder until just combined.
  3. Spread batter evenly in the pan and bake for 12-15 minutes until springy.
  4. Cool slightly, then roll the cake in a powdered sugar-dusted towel. Allow to cool completely.
  5. Whip heavy cream with powdered sugar until soft peaks form; fold in melted chocolate chips.
  6. Unroll cake, spread filling inside, roll back tightly, trim ends, and serve chilled or at room temperature.
