  • 1 cup boiling water
  • ½ cup unsalted butter, room temperature
  • 1 cup light brown sugar

  • ½ cup dark brown sugar
  • ½ cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Soak chopped dates in boiling water for 15 minutes.
  2. In a bowl, cream butter and brown sugar until fluffy. Add eggs one at a time, mixing well.
  3. Fold in flour and baking powder until combined. Incorporate soaked dates into the batter.
  4. Pour batter into a greased baking dish and bake for 30-35 minutes or until a toothpick comes out clean.
  5. For the sauce, heat dark brown sugar and heavy cream in a saucepan over medium heat, stirring until dissolved. Simmer for about five minutes.
  6. Serve warm pudding drizzled with toffee sauce and your choice of ice cream or whipped cream.
