Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 2 medium sweet potatoes, peeled and diced (about 2 cups)
  • 2 tbsp olive oil
  • 2 cups fresh spinach
  • 1 tsp garlic powder
  • 2 tbsp balsamic vinegar

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Season chicken with salt, pepper, garlic powder, and drizzle with olive oil.
  3. Toss diced sweet potatoes in a bowl with olive oil, salt, and pepper; spread on one side of the baking sheet.
  4. Place seasoned chicken on the other side of the baking sheet. Roast for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes are tender.
  5. Sauté spinach in a skillet over medium heat until wilted (about 3-4 minutes).
  6. Slice chicken and assemble bowls: layer spinach first, followed by sweet potatoes and chicken slices. Drizzle with balsamic vinegar before serving.
