  • 1 cup egg whites (approximately 8 large egg whites)
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/2 cup diced bell peppers (any color)
  • 1/4 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a muffin tin with nonstick cooking spray.
  2. In a skillet over medium heat, add a splash of olive oil. Sauté the chopped spinach and diced bell peppers for about 3-4 minutes until softened.
  3. In a large mixing bowl, whisk the egg whites with salt and pepper until frothy.

  5. Spoon the mixture into each muffin tin cavity, filling them about three-quarters full.
  6. Bake for 20 minutes or until set and lightly golden on top. Allow to cool slightly before removing from the tin.
