  • 4 cups crusty bread (stale baguette or ciabatta), cubed
  • 2 cups heirloom tomatoes, chopped
  • 1 medium cucumber, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 cup fresh basil leaves, torn
  • 3 tbsp balsamic vinegar
  • 4 tbsp extra virgin olive oil
  • Salt and pepper to taste
