  • 1 cup powdered sugar
  • 2 tbsp freshly squeezed lemon juice

  4. Gradually mix dry ingredients into the wet mixture until just combined; avoid overmixing.
  5. Gently fold in blueberries without crushing them.
  6. Spoon batter into prepared muffin tins, filling each cup about two-thirds full. Bake for 18-20 minutes or until golden brown.
  7. Allow muffins to cool slightly before drizzling with the glaze made from mixing powdered sugar and lemon juice.
