  • 4 cups shredded green cabbage
  • 2 medium Granny Smith apples, thinly sliced
  • 1 cup walnuts, roughly chopped
  • 1 cup grated carrots
  • 1/4 cup finely sliced red onion
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey

Instructions

  1. Wash all fresh produce thoroughly. Slice the cabbage into thin strips, grate the carrots, core and slice the apples (keeping the skin on), and finely chop the red onion.
  2. In a bowl, whisk together olive oil, apple cider vinegar, and honey until well combined. Adjust seasoning if needed.
  3. In a large mixing bowl, combine the cabbage, carrots, apples, walnuts, and red onion. Toss gently to mix.
  4. Pour the dressing over the mixture and toss again until everything is well coated.
  5. Cover and refrigerate for at least one hour before serving to allow flavors to meld.
