  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, cut into wedges
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Place chicken breasts on one side of the baking sheet. Drizzle with olive oil and season with salt, pepper, garlic powder, and oregano.
  3. On the other side of the pan, arrange zucchini slices, cherry tomatoes, and red onion wedges. Drizzle with olive oil and season lightly with salt and pepper.
  4. In a small bowl, mix balsamic vinegar and lemon juice; pour over chicken and vegetables.
  5. Roast in the oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender.
  6. Let rest for a few minutes before serving. Drizzle any remaining sauce over the dish before plating.
