  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 1/4 cup pure honey
  • 1/2 cup BBQ sauce (plus extra for serving)
  • 1 3/4 cups low-sodium chicken broth
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 2 tbsp low-sodium soy sauce
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Chop bell peppers and onions into bite-sized pieces.
  2. In a bowl, season chicken thighs with salt, pepper, garlic powder, and half of the BBQ sauce.
  3. Heat oil in an oven-safe skillet over medium heat; sauté bell peppers and onions for about five minutes until softened.
  4. Add seasoned chicken thighs to the skillet along with rice. Pour in chicken broth and remaining BBQ sauce; stir to combine.
  5. Cover with aluminum foil and bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (74°C) and rice is tender.
  6. Fluff rice with a fork, serve hot, and drizzle with extra BBQ sauce if desired.
