  • 2 cups fresh pumpkin, cubed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup coconut milk
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Prepare the pumpkin by cutting it in half, removing seeds and skin, then cubing it.
  2. In a large pot over medium heat, add olive oil. Sauté chopped onion for about 5 minutes until translucent. Add minced garlic and cook for an additional minute.
  3. Add cubed pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes until pumpkin is soft.
  4. Blend the soup until smooth using an immersion blender or stand blender (let cool slightly if using a stand blender).
  5. Return the blended soup to low heat. Stir in coconut milk, cinnamon, nutmeg, and black pepper. Simmer for an additional 5 minutes.
