  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 1 large yellow onion, diced
  • 3 medium carrots, sliced
  • 2 medium Russet potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients: Chop beef, dice onion, slice carrots, cube potatoes, and mince garlic.
  2. Brown the beef: Heat olive oil in a large pot over medium-high heat. Brown beef cubes on all sides for about 5-7 minutes. Remove from pot.
  3. Sauté vegetables: In the same pot, add onions and sauté until translucent (about 4 minutes). Stir in garlic until fragrant.
  4. Combine ingredients: Return beef to the pot along with carrots and potatoes. Pour in beef broth and add thyme and bay leaves. Stir well.
  5. Simmer: Bring to a boil then reduce heat to low. Cover partially and simmer for 1.5 to 2 hours or until beef is tender.
