  • 1 cup sushi rice
  • 2 sheets nori (seaweed)
  • 1 ripe avocado, sliced
  • 1/2 cucumber, cut into thin strips
  • 4 oz crab meat (or imitation crab)
  • 3 tbsp mayonnaise
  • 1 tbsp sriracha
  • 2 tbsp soy sauce

Instructions

  1. Rinse sushi rice under cold water until clear, then cook according to package instructions with about 1¼ cups water. Let cool slightly.
  2. While the rice cools, slice the avocado and cucumber into thin strips.
  3. Lay a bamboo sushi mat on a flat surface and place a sheet of nori shiny side down. Wet your hands to prevent sticking.
  4. Spread 1/2 cup of sushi rice evenly on the nori, leaving an inch at the top edge free from rice. Press gently to adhere.
  5. Add crab meat in the center, then layer avocado and cucumber strips atop the crab meat.
  6. Carefully roll from the bottom up using the bamboo mat while applying gentle pressure until reaching the exposed edge of nori; seal by dampening it slightly with water. Slice into pieces and drizzle with spicy mayo and soy sauce before serving.
