  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup BBQ sauce
  • 4 cups coleslaw mix (cabbage and carrots)
  • 4 large flour tortillas
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar

Instructions

  1. Preheat the oven to 375°F (190°C). Place chicken breasts in a baking dish, drizzle with olive oil, season with salt and pepper, and coat generously with BBQ sauce.
  2. Bake for 25-30 minutes until cooked through (internal temperature of 165°F/74°C). Let cool slightly.
  3. Shred the chicken using two forks.
  4. In a bowl, mix coleslaw mix with apple cider vinegar and additional BBQ sauce if desired.
  5. Lay tortillas flat, place shredded chicken in the center, followed by coleslaw mixture.
  6. Roll tightly from bottom to top, folding in the sides as you go. Cut in half if preferred and serve immediately with extra BBQ sauce drizzled on top.
