  • 8 oz rotini pasta
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or canned)
  • 1 cup bell peppers, chopped (mix of red and yellow)
  • 1/2 cup red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and let cool.
  2. While the pasta cools, chop the bell peppers, red onion, and cilantro. Combine in a large mixing bowl with the black beans and corn.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper to create the dressing.
  4. Add the cooled pasta to the vegetable mixture. Pour the dressing over everything and toss gently until well combined.
  5. Cover and chill in the refrigerator for at least one hour before serving.
