  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cucumber, diced
  • 4 green onions, sliced
  • ½ cup mayonnaise
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper and place in a baking dish coated with nonstick spray.
  2. Bake chicken for 25-30 minutes until cooked through (internal temperature of 165°F/74°C). Once cooled slightly, slice into strips.
  3. While chicken bakes, chop bell peppers and cucumber; slice green onions.
  4. In a bowl, mix mayonnaise, Sriracha sauce, and honey until smooth. Adjust seasoning as needed.
  5. In serving bowls, layer cucumbers, bell peppers, and sliced chicken. Drizzle with sauce and garnish with green onions.
