  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sweet corn (fresh or frozen)
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small red onion, diced
  • 2 tsp cumin powder
  • Juice of 1 lime
  • ½ cup chopped fresh cilantro
  • 2 tbsp olive oil (for cooking)
  • ½ cup salsa (of your choice)

Instructions

  1. Gather all ingredients. Chop bell peppers and onion; rinse black beans.
  2. Heat olive oil in a skillet over medium heat. Season the chicken with cumin, salt, and pepper. Cook for about 6-7 minutes per side until golden brown and cooked through.
  3. Remove chicken from the skillet. In the same skillet, add more olive oil if needed and sauté bell peppers and onions for about 5 minutes until softened.
  4. Slice the cooked chicken into strips. Add black beans, corn, sliced chicken, and lime juice to the skillet. Stir gently to combine.
  5. Transfer to bowls and top with salsa and cilantro before enjoying.
