  • 1 cup creamy peanut butter
  • 1 cup full-fat coconut milk
  • 4 tbsp low-sodium soy sauce
  • Juice of 1 lime
  • 2 tbsp brown sugar
  • 1 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Optional: sliced bell peppers or snap peas

Instructions

  1. Prepare ingredients by dicing chicken breasts and mincing garlic.
  2. In a large skillet over medium heat, add oil. Once hot, cook the diced chicken for 6-8 minutes until golden brown and no longer pink.
  3. In a bowl, whisk together peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and red pepper flakes until smooth.
  4. Pour the sauce over the cooked chicken in the skillet and reduce heat to low. Simmer for 5-7 minutes.
