  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup orzo pasta
  • 2 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with garlic powder, oregano, salt, and pepper. Heat olive oil in a large skillet over medium heat and cook chicken for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
  2. In a separate pot, bring chicken broth to a boil. Add orzo pasta and cook according to package instructions (about 8-10 minutes). Drain excess liquid if needed.
  3. In the same skillet used for the chicken, sauté cherry tomatoes and spinach for about 3-4 minutes until softened.
  4. Slice rested chicken into bite-sized pieces. Combine cooked orzo, sautéed veggies, and sliced chicken in the skillet; stir well.
  5. Adjust seasoning as needed with salt, pepper, or herbs, then heat everything together for an additional 2-3 minutes before serving.
