Ingredients

Scale
  • 4 thick slices of brioche or challah bread
  • 4 oz cream cheese, softened
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon (plus more for coating)
  • 2 large eggs
  • 1 cup whole milk (or almond milk)
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter (for cooking)

Instructions

  1. Prepare the Filling: In a mixing bowl, combine cream cheese, granulated sugar, and cinnamon until smooth.
  2. Assemble: Spread the cream cheese mixture between two slices of bread to form a sandwich. Repeat with remaining slices.
  3. Whisk Egg Mixture: In another bowl, whisk together eggs, milk, vanilla extract, and a pinch of salt.
  4. Heat Pan: Preheat a skillet over medium heat and add butter until melted.
  5. Cook Sandwiches: Dip each sandwich in the egg mixture, letting excess drip off. Cook in the skillet for about 3-4 minutes on each side until golden brown.
  6. Coat with Cinnamon Sugar: Remove from heat and immediately coat both sides in cinnamon sugar while still warm.
