  • 1 cup Arborio rice
  • 8 oz fresh mushrooms (cremini and shiitake), chopped
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat the vegetable broth over medium heat until simmering.
  2. In a large skillet, melt 2 tbsp of butter over medium heat. Sauté the onion until translucent (about 5 minutes), then add minced garlic and cook for an additional minute.
  3. Add chopped mushrooms to the skillet and cook until softened (5-7 minutes).
  4. Stir in Arborio rice and toast for 2 minutes until slightly translucent.
  5. Gradually add warm broth one ladle at a time, stirring frequently until each addition is absorbed (about 18-20 minutes).
  6. Once creamy and al dente, remove from heat and stir in Parmesan cheese and remaining butter. Season with salt and pepper and serve hot.
