  • 9 oz fresh cheese tortellini
  • 1 lb large shrimp, peeled and deveined
  • 4 cups baby spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Cook tortellini in boiling salted water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, melt butter. Add garlic and sauté until fragrant.
  3. Add shrimp and cook until pink and opaque, about 3-4 minutes. Remove shrimp from skillet.
  4. Pour heavy cream into the skillet, scraping up any bits from the bottom. Simmer for 2 minutes before stirring in Parmesan cheese until melted.
  5. Add cooked tortellini and spinach to the sauce, tossing gently to coat. Return shrimp to skillet and mix until heated through.
  6. Serve hot, garnished with additional Parmesan if desired.
