  • 1 box (15.25 oz) red velvet cake mix
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 16 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 1 cup heavy cream, cold
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two round cake pans. In a large bowl, mix red velvet cake mix, melted butter, eggs, and water as per package instructions until smooth. Pour into prepared pans.
  2. Bake for 25-30 minutes until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks to cool completely.
  3. In another bowl, beat cream cheese and sugar until smooth. Add vanilla and heavy cream; mix until fluffy.
  4. Slice each cooled cake layer horizontally into two halves. On a serving plate, stack layers with cheesecake filling in between.
  5. Chill for at least four hours or overnight. Before serving, top with sliced fresh strawberries.
