Ingredients

Scale
  • 8 oz spaghetti
  • 1 lb medium shrimp, peeled and deveined
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • ¼ cup fresh parsley, chopped
  • ½ cup low-sodium chicken broth
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. 1. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente according to package instructions. Drain and set aside, reserving ½ cup of pasta water.
  2. 2. In a large skillet over medium heat, warm olive oil. Sauté minced garlic for about 1 minute until fragrant.
  3. 3. Add shrimp to the skillet, seasoning with salt and pepper. Cook until they turn pink and opaque, approximately 2-3 minutes per side. Remove shrimp from the skillet and set aside.
  4. 4. Pour heavy cream and chicken broth into the same skillet, stirring well. Let simmer on low heat for about 5 minutes until slightly thickened. Mix in lemon juice and grated Parmesan cheese.
  5. 5. Add cooked spaghetti to the skillet along with reserved pasta water as needed to achieve desired sauce consistency. Gently toss until pasta is coated in sauce.
  6. 6. Return shrimp to the skillet, mixing gently to combine all ingredients. Serve immediately garnished with chopped parsley.
