  • 1 lb pork tenderloin
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 2 sprigs fresh rosemary, chopped
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots), chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together balsamic vinegar, honey, minced garlic, and chopped rosemary.
  3. Marinate the pork tenderloin in half of the marinade for at least 30 minutes.
  4. Toss chopped mixed vegetables in olive oil, salt, and pepper; spread them on one side of the baking sheet.
  5. Place the marinated pork on the baking sheet with the veggies and drizzle remaining marinade over both.
  6. Roast for 25-30 minutes until pork reaches an internal temperature of 145°F (63°C). Let rest for five minutes before slicing.
