  • 4 large bell peppers (any color)
  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 8 oz fresh mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 cup low-sodium beef broth
  • 1 tbsp Dijon mustard
  • 1 tsp paprika

Instructions

  1. Preheat oven to 375°F (190°C). Wash bell peppers, slice off tops, and remove seeds.
  2. In a skillet over medium heat, brown ground beef until fully cooked; drain excess fat.
  3. Add chopped onion and sliced mushrooms to the skillet; sauté until softened (about 5 minutes). Stir in minced garlic and cook for an additional minute.
  4. Lower the heat and mix in sour cream, beef broth, Dijon mustard, and paprika; let simmer for about 5 minutes.
  5. Spoon the beef mixture into each prepared bell pepper without overfilling.
  6. Place stuffed peppers upright in a baking dish, cover with foil, and bake for approximately 30 minutes. Remove foil during the last 10 minutes to brown the tops.
