  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • ½ cup sliced onions
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream or Greek yogurt
  • 1 ripe avocado or ½ cup guacamole

Instructions

  1. Gather all ingredients on a clean surface. Rinse the black beans under cold water and chop fresh vegetables into bite-sized pieces.
  2. Heat each tortilla in a skillet over medium heat for about 30 seconds per side until soft.
  3. Lay one tortilla flat; layer with half a cup of black beans, fresh vegetables, cheese, sour cream or Greek yogurt, and avocado.
  4. Fold the sides of the tortilla toward the center and then fold up from the bottom to secure the filling.
