  • 2 cups fresh broccoli florets (about 150g)
  • 2 cups fresh cauliflower florets (about 150g)
  • 8 oz (225g) sausage (Italian or chicken)
  • 1 cup sharp cheddar cheese (grated, about 100g)
  • 1 cup whole milk (240ml)
  • 3 tbsp unsalted butter (42g)
  • 3 tbsp all-purpose flour (24g)
  • Salt and pepper to taste

Instructions

  1. Prepare the Vegetables: Wash and cut broccoli and cauliflower into bite-sized pieces. Boil salted water, add veggies, and cook for 3-5 minutes until slightly tender but still crisp. Drain and set aside.
  2. Cook the Sausage: In a skillet over medium heat, brown sausage for about 7-10 minutes, breaking it into smaller pieces as it cooks. Remove from heat and set aside.
  3. Make the Cheese Sauce: In the same skillet, melt butter over medium heat. Add flour and whisk for about two minutes to form a roux. Gradually whisk in milk until smooth; allow to thicken before adding cheddar cheese until melted.
  4. Combine Everything: Stir in broccoli, cauliflower, and sausage into the cheese sauce. Season with salt and pepper.
  5. Bake: Preheat oven to 350°F (175°C). Transfer mixture to a greased baking dish, sprinkle extra cheese on top if desired, and bake for 20-25 minutes until bubbly and golden.
