  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (1 stick)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp peppermint extract
  • 1/2 cup crushed candy canes (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a saucepan over low heat, melt the butter and sugar until smooth. Remove from heat and stir in cocoa powder, then mix in eggs one by one. Fold in flour and peppermint extract until just combined.
  3. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out mostly clean. Let cool completely.
  4. Once cooled, cut into small squares or circles using a cookie cutter for brownie bombs.
  5. Melt additional chocolate, dip each brownie circle, and roll in crushed candy canes before placing on parchment paper to set.
