Ingredients

Scale
  • 1 lb boneless chicken thighs
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 4 garlic cloves, minced
  • 2 tbsp fresh ginger, grated
  • 1 tbsp sesame oil
  • 4 cups low-sodium chicken stock
  • 2 green onions, sliced

Instructions

  1. 1. Marinate the Chicken: In a bowl, mix soy sauce, brown sugar, garlic, and ginger. Add chicken thighs, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes or overnight.
  2. 2. Prepare the Broth: In a pot over medium heat, add chicken stock and remaining marinade. Bring to a simmer while stirring occasionally.
  3. 3. Sear the Chicken: Heat sesame oil in a skillet over medium-high heat. Remove chicken from marinade (discarding leftover liquid) and sear until golden brown on both sides (about 4-5 minutes per side).
  4. 4. Combine & Simmer: Transfer seared chicken into the simmering broth. Cook together for an additional 15-20 minutes until the chicken is cooked through.
  5. 5. Garnish & Serve: Remove from heat, slice the chicken thighs, and place them atop broth. Garnish with green onions before serving.
