Cheesy Twice-Baked Stuffed Potatoes With Spinach & Mushrooms are an irresistible comfort food that combines fluffy potatoes with creamy cheese, savory mushrooms, and vibrant spinach.   • 4 large Russet potatoes
  • 2 cups fresh spinach, chopped
  • 1 cup sliced mushrooms (cremini or button)
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the potatoes and wrap them in foil.
  2. Place wrapped potatoes on a baking sheet and bake for 45-60 minutes until tender.
  3. While baking, melt butter in a skillet over medium heat, add mushrooms, sauté until golden, then add spinach until wilted.
  4. Once potatoes are cool, slice in half lengthwise and scoop out insides into a bowl, leaving some potato in skins.
  5. Mix potato insides with sautéed vegetables, sour cream, cheese, salt, and pepper until well combined. Spoon mixture back into potato skins and top with additional cheese if desired.
  6. Return to the oven and bake at 375°F (190°C) for an additional 15-20 minutes until heated through.
