  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 2 cups cherries, pitted (fresh or canned)

Instructions

  1. Preheat oven to 325°F (160°C). Line an 8×8 inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of the prepared dish.
  3. Beat cream cheese in another bowl until smooth. Add sour cream, remaining sugar, and vanilla; mix until creamy.
  4. Spread the cheesecake mixture over the crust evenly.
  5. Top with pitted cherries.
  6. Bake for 30-35 minutes until edges are set but center is slightly jiggly. Cool at room temperature before refrigerating for at least two hours.
