  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1/2 cup chopped fresh green onions
  • 1 cup enchilada sauce
  • 1 cup full-fat sour cream
  • 1/2 cup heavy cream
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Cook chicken in a skillet over medium heat for about 6-7 minutes per side until fully cooked. Shred the chicken using two forks.
  2. In a saucepan over medium heat, combine sour cream, heavy cream, and garlic powder. Season with salt and pepper. Simmer gently for about 5 minutes until slightly thickened.
  3. Spread some enchilada sauce on the bottom of a baking dish. Fill each tortilla with shredded chicken, green onions, and cheese; roll tightly and place seam-side down in the dish.
  4. Pour remaining enchilada sauce over the top, drizzle with creamy white sauce, and sprinkle additional cheese.
  5. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10-15 minutes until bubbly.
