  • 4 large bell peppers (red, yellow, or green)
  • 1 cup lump crab meat
  • 1 cup medium shrimp, peeled and deveined
  • 8 oz cream cheese, softened
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 tsp Old Bay seasoning
  • 1/2 cup panko breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Cut the tops off the bell peppers and remove seeds; place them in the prepared dish.
  3. In a skillet over medium heat, sauté diced onion and minced garlic until fragrant. Add shrimp and cook until pink, then fold in crab meat, cream cheese, Old Bay seasoning, and half of the panko breadcrumbs.
  4. Stuff each bell pepper with the seafood mixture and top with remaining panko breadcrumbs.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until tops are golden brown.
