  • 4 medium sweet potatoes (about 2 lbs)
  • 1 cup fresh cranberries (or 3/4 cup dried cranberries)
  • 2 cups diced Granny Smith apples (about 2 medium apples)
  • 1 tsp ground cinnamon
  • 4 tbsp unsalted butter
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the sweet potatoes, poke holes in them with a fork, and place them on a baking sheet.
  2. Bake for 45-60 minutes until tender. Let cool slightly.
  3. Cut the sweet potatoes in half lengthwise and scoop out most of the flesh into a bowl.
  4. In another bowl, combine cranberries, diced apples, brown sugar, and cinnamon. Mix well.
  5. Add the scooped sweet potato flesh and butter to the cranberry-apple mixture; blend until smooth.
  6. Spoon the filling back into the potato skins and bake at 350°F (175°C) for an additional 15-20 minutes until heated through.
