  • 6 cups day-old crusty bread, cubed
  • 1 cup dried cranberries
  • 1 cup chopped pecans, toasted
  • 1 medium yellow onion, chopped
  • 2 stalks celery, chopped
  • 2 cups low-sodium vegetable or chicken broth
  • 2 tbsp fresh sage, chopped
  • 1 tbsp fresh thyme, chopped
  • 4 tbsp unsalted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spread cubed bread on a baking sheet and toast in the oven for about 10-15 minutes until golden brown.
  3. In a skillet over medium heat, melt butter and sauté onion and celery until softened (5-7 minutes). Add herbs during the last minute.
  4. In a large bowl, combine toasted bread cubes, sautéed vegetables, cranberries, and pecans.
  5. Gradually pour in broth until the mixture is damp but not soggy.
  6. Transfer to a greased baking dish, cover with foil, and bake for 30 minutes. Remove foil for the last 10 minutes to crisp up the top.
