  • 1 cup breadcrumbs (fresh or dried)
  • 1/2 cup cranberries (dried or fresh, unsweetened)
  • 1 medium onion (finely chopped)
  • 1/2 cup celery (diced)
  • 2 tbsp fresh parsley (chopped)
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 2 large eggs
  • Salt and pepper to taste
  • 1 tbsp olive oil (for sautéing)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Sauté the chopped onion and celery until soft, about 5 minutes. Remove from heat and let cool slightly.
  3. In a large bowl, combine ground turkey, sautéed vegetables, breadcrumbs, eggs, cranberries, parsley, thyme, salt, and pepper. Mix until well incorporated.
  4. Shape the mixture into balls about one inch in diameter and place them on the prepared baking sheet.
  5. Bake for 25-30 minutes or until golden brown and cooked through, reaching an internal temperature of at least 165°F (74°C).
