  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup orzo pasta
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, heat olive oil and cook seasoned chicken for about 6-7 minutes per side until golden brown. Remove and dice into bite-sized pieces.
  3. In the same skillet, sauté onions and garlic until fragrant. Add diced carrots and cook until softened.
  4. Pour in chicken broth, bringing it to a simmer. Stir in heavy cream and thyme; allow to thicken for about five minutes.
  5. Add cooked orzo, diced chicken, and frozen peas into the sauce mixture; stir until heated through.
